Portuguese Pumpkin / Gourd Jam
All over Portugal we saw fields of enormous pumpkins and pumpkins stacked like walls. We have never had pumpkin soup in Portugal, but you often find pumpkin/gourd jam in cakes or served with cheese. We had some at a restaurant in Chaves (see previous post) which was absolutely deeelicious.
Orange Marmalade (or Jamalade)
I prefer calling my “jam” Jamalade and not Marmalade, because I use sweet oranges (or basically any orange I can find that hasn’t been sprayed with poisons/pesticides/etc) rather than Seville oranges which are used to make the original Marmalade. I find the Seville oranges just too bitter for my delicate taste!
